I'll start with something easy and that I know thoroughly - my entire setup.

My backend - Intel mobo with a celeron p4 2.2 ghz. 40 gb hard drive with system and mythtv. 2 gb ram. 1 pvr-250. 7 250 gb external hard drives.

My other fileserver - Old HP P3 1.5 ghz. 512mb ram. 2tb hard drives. Not long for this world.

My family room frontend - IBM Netvista. 20gb hard drive. NFS mounts everything except system and mythfrontend for now. Planning to netboot it at some time.

My kitchen frontend - Compaq deskpro 2000. 40gb hard drive. NFS mounts everything except system and mythfrontend for now. Planning to netboot it at some time.

My bedroom frontend - MediaMVP. What can I say? Awesome.

That's it for now. I'll probably scrap the different machines and replace them all with the same box, once I figure out what I can afford. Then I'll put one in each of the four bedrooms and everywhere else. So much cat 5e and coax run in the last 2 years that I'd love to forget about it...but there's some fiber to come I hear. My wife hated the idea of Myth (because then I'm not spending time with her), but now that it is in full use, she can't live without it. Kids love it too.
